Courgette & Halloumi Skewers
Ingredients
Halloumi – cut into slices
Courgettes – cut into slices
Peppers – cut into slices
1/2 tsp chilli powder
A handful of fresh mint, chopped
1 lemon – juiced
Olive Oil
Skewers
Method
Mix the chilli powder, lemon, mint and oil in a bowl
add the halloumi, courgettes and peppers.
Leave to marinade for at least 30 minutes.
Put the halloumi, courgettes and peppers onto skewers.
Cook on the bbq for around 10 minutes, rotating every few minutes.

Curried Cauliflower with Pomegranate & a yoghurt mint dressing.
This one you can either cook on the BBQ, or pop it in the oven before the party!
Ingredients
Cauliflower – chopped
1tbsp cumin ( you may need more depending on the size of the cauliflower – you want a generous amount covering the cauliflower)
1 tsp turmeric
1 tbsp Olive oil
Fresh Coriander
Salt & Pepper
Half a pomegranate (Seeds)
100ml yoghurt (greek, soy etc)
Handful fresh mint
Half a lemon, juiced
Method
Place the olive oil, cumin, turmeric, salt and pepper in a bowl and mix
Add the cauliflower and let it marinade for at least 15 minutes.
If you are roasting – put it in a roasting tin and cook for around 30 minutes. If you are cooking on the BBQ put it on and cook for around 10 – 15 minutes on each side. You want the cauliflower to go crispy.
In a bowl add the cauliflower, pomegranate and coriander & mix.
Mix the yoghurt, mint & lemon. Add salt and pepper to taste.
Serve on a large plate with a drizzle of yoghurt
