Ok ok…. So we know it’s not summer yet, but we are REALLY manifesting some sun for spring. Raspberries are in season at this time of year so we are bringing you a delicious sweet treat. A raspberry & cream ice lolly might just be exactly what you need to bring the summer to you. Bring on the sun! 

(Serves 4) 

 

Ingredients: 

  • 1 cup frozen raspberries

  • 1/2 lemon, juiced

  • 1 cup vanilla bean yogurt, coconut milk / yoghurt works here as a dairy free alternative

 

Instructions:

  1. 1 tbsp maple syrup (optional) – we prefer without but for those with a sweet tooth, pop a little drizzle in. 

  2. Mash the frozen raspberries with lemon juice and maple syrup. 

  3. Place some of the raspberry mixture into your mold, then put in some yogurt and finish with a bit more raspberry mixture. 

  4. Top with sticks and then allow to freeze for at least 6 hours.
